Pasta quiche, by Mario Matassa

This ‘pasta quiche’ (torta salata con i spaghetti, in Italian!) is a real treat and is so versatile it works for all occasions!

200g spaghetti
olive oil
1 Italian sausage
1 courgette, finely diced
1 sweet red pepper, finely diced
3 medium free range eggs
3 heaped tbsp Italian hard cheese
salt and pepper

1. Preheat the oven to 180°C/Gas Mark 4. Bring a large pot of salted water to the boil and add the spaghetti. Cook until al dente, about 10-11 minutes.

2. In the meantime, add a few tbsp olive oil to a frying pan, skin and break up the sausage and add to the pan with the courgette and pepper. Cook until the sausage is cooked through and the vegetables are tender.

3. When the spaghetti is cooked, drain and add to the sausage and vegetables, taste for seasoning. Place the spaghetti into a 20cm lined baking tin.

4. In a separate bowl, whisk the eggs together, then pour over the sausage and spaghetti. Sprinkle over the Italian hard cheese and bake for about 20 minutes until the eggs are set and the pie is golden on top. Remove the pasta quiche from the oven and allow to cool before slicing.
