Tomato, mint and red onion salad

I have fond memories of this salad and of eating it in Syracuse, Sicily, with my father. Some friends there grow lettuces, and this salad was part of a wonderful meal after a long, dusty drive to their farm. It was the first time I had seen tomatoes, onion and mint together – and it is a stunning combination.

Serves 4

Ingredients

4 firm, bright red tomatoes

half a small red onion, peeled and finely chopped

a handful of fresh mint leaves, finely chopped

3 tbsp extra-virgin olive oil

juice and finely grated zest of 1 unwaxed lemon

sea salt and freshly ground black pepper

Method

Slice the tomatoes and arrange on a large plain plate.

Sprinkle the onion and mint over the tomatoes, and then drizzle with oil and lemon juice. Sprinkle over the finely chopped zest of the lemon, and season with salt and pepper.

Allow all the ingredients to come together for 20 minutes, and then serve.
