Mario Matassa’s radicchio recipe makes for an excellent contorno or part of a main of mixed roasted vegetables…
Preparation time 1 minutes
Barbecuing time 5 minutes
• 2 heads of Treviso radicchio
• 4 tbsp extra-virgin olive oil
• 2 tbsp lemon juice
• salt and freshly ground black pepper
1 Cut the radicchio in half through the root so that it still holds together. Place the radicchio on a hot barbecue and cook for 2-3 minutes on each side, until the outer leaves begin to colour and wilt. Remove from the heat and place on a serving plate.
2 To make the dressing, simply whisk together the olive oil, lemon juice and seasoning. Pour this over the radicchio and serve.
TIP When you’ve got the hang of it, you can make these in just five minutes flat, but they do need to be cut to the same size, and those five minutes are always going to require your full concentration.
