Apple cake

This apple cake or torta di mele is absolutely divine and a good way to use up those leftover apples! 

Apple cake/ Torta di mele

Ingredients:

  • 4 large apples (1kg)
  • juice of ½ a lemon
  • 2 medium free-range eggs
  • 150g brown sugar
  • 100g wholewheat flour, sifted
  • 100g plain flour, sifted
  • 150ml milk
  • 2 tsp baking powder
  • 3 tbsp sultanas
  • icing sugar, to dust

Method:

  1. Preheat the oven to 180°C/Gas Mark 4. Begin by peeling and chopping the apples into 1cm dice. Place the apples in a large bowl, add the lemon juice and toss well.
  2. In a separate bowl, place the eggs and sugar, then whisk together well until light and foamy. Add the sifted flours, milk and baking powder. Finally, when everything is well mixed, add the apple pieces and sultanas.
  3. Grease and line a 24cm cake tin, then pour in the mixture and bake for 40-45 minutes. Test the cake is cooked by inserting a skewer into the middle of the cake. If it comes out clean the cake is cooked, if not, place the cake back in the oven for a couple of minutes. Remove the cake from the tin and place on a wire rack. Once it has cooled, dust the cake with icing sugar to serve.

TIP You can substitute the apples with ripe, but firm pears, and instead of the sultanas use mixed spice.
